Well, I drove mine with only the single center wiper for several months after the cowl rusted through at the point where the driver's side wiper pokes through.
So, yes, it does work. As a quick fix you need to adjust the positioning of the center wiper arm so that it wipes evenly across both sides. And, yes, a longer wiper arm would help greatly. But, you don't really need to relocate the wiper motor. Simply remove the arm leading to the driver's side from under the cowl.
Beyond that, without modifying the stops in some way or another would probably be necessary as without it the wiper doesn't make a complete 180 degree pass but rather in a V and never completely goes down to what one would consider a standard rest position (hence the need to reposition the wiper arm).
