Went through the car with a fine toothed comb today and couldn't find a single leak anywhere.

Since I topped the coolant off, it hasn't lost a drop, and I have put on about 500 miles of city/highway driving since then. I suspect, as someone earlier mentioned, that some of the water may have evaporated with the weather warming up.

Thanks for the help, I will let y'all know if my coolant problem comes back.

The mystery of the missing coolant has been solved. It turns out there was a leak after all, although a really tiny leak that only occured when the car was off and only a few drops dripped out.

It looks like it's happening where the drain plug is supposed to be on my all-brass dual core radiator. However the odd thing is that instead of a wingnut, there is this flat, round plastic plug. I'll probably smother it in silicon and call it a day.
