I replaced my sticking throttle cable last week with a good used one. The first thing I noticed was it was ALOT easier to hit the gas then- when I filled up I noticed my mpg went up by about 10%(38 to 43mpg). The weather has warmed up a little during the day, but I was still driving in morning and evening rush. Is this just coincidence or could it make that much difference?

well if it was i used i would of used liquid wrench and used 2 bags and filled them with that and tied the bags closed and taped then and let the cable sit over night then clean in the next day i used this trick on my old chevy i had 3 years ago try it might just do the trickFORD BUILT TOUGH SINCE 1987-1993 FORD FESTIVA LX

I can see how a sticking throttle cable might effect the amount of fuel fed into the engine, but I see no way that it would have any effect on the efficiency with which that fuel was used.
A 10% mileage improvement is phenomenal and for it to happen without any apparent cause is impossible.
Keep checking you mileage. I expect the pump on you fillup cut off too soon. (smile) Or maybe you have a neighbor who is secretly adding gas to your tank while you are asleep.
