Can anything be done to smooth out or replace the races for the front wheel bearings on my '91 without having to replace the entire knuckle/spindle?

The bearing races are pressed or driven into the hub. You can remove them with a brass punch and a hammer or a steel punch if you are very careful. Unless you actually spun the race in the hub, there is no reason to replace the hub. My tool of choice for a punch was an old (no guarantee) Asian ratchet. I cut the head off the ratchet and ground the end where I cut the head off nice and flat. The bearing races are harder than the ratchet handle and after a few uses I re-grind the end flat and smooth again.You gonna race that thing?
