          Yes if you leave them in the ground they will split and resprout new heads next spring. however if they were small heads to begin with (because you planted in spring) im not sure how well next years garlic will be if you leave them, you might just get alot of small garlic. I would try it as an experiment with a few of them.
          the garlic you saw going to seed was an heirloom hardneck variety called "siberian" that still produces a flower and bulbils. so if you get a variety like that it will sprout a flower, most "hardneck" types flower. The kind most people are familiar with, and is in every grocery store is a soft neck variety and will not produce a flower, all of the plants reproduction effort is underground.

                          3" in. 5gal bucket for head size reference.

                          Been meaning to get it plumbed to my water pump, 350 sbc driving a 4" in 3" out on a 4sp manual. Think I missed out on a good crop?

                          Maybe next year.

                              Fresh did you use the potato digger you bought earlier this year, looks like a lot of fried taters this winter, make mine a little extra crispy around the edges.

                                ^ A disappointing no ! Not enough potato acreage yet to use the 100 year old technology. I used the middle buster pictured below.
